Shot for where it will be seen
A dish on a delivery platform is seen at the size of a postage stamp, on a phone, next to a competitor's. A dish in a printed menu is seen large and close. Those are different photographs.
Small-format food photography needs simplification — fewer elements, stronger shape, more contrast — because subtlety disappears at thumbnail size.
Food has a short window
Most dishes look their best for a couple of minutes. Herbs wilt, sauces skin over, ice melts, and anything fried starts losing its edge immediately.
The practical answer is to have the shot built and lit before the food arrives, so the plate goes down into a setup that is already working.
Working in a live kitchen
- Shooting between services is easier on everyone than shooting during one.
- A prep list beforehand means the kitchen can plate in an order that suits the light rather than the ticket rail.
- Duplicates help — the second plate is usually the one that photographs.
