What a controlled room gives you
Weather stops mattering, the light is the same at the end of the session as at the start, and the background is chosen rather than whatever happened to be behind you.
It also removes the time pressure of shooting outdoors, where good light lasts an hour and then does not.
Backgrounds change the picture
A light background reads open and contemporary. A dark one reads formal and draws the eye harder to the face. A textured backdrop sits between the two and gives a portrait more depth than a flat colour.
It is worth deciding this against where the picture will hang, not just how it looks on the day.
